I will keep this short and sweet. Found a website that has some great info regarding garlic, the health benefits, how to prepare and use in food, etc. Garlic is such a great spice/root. I love it and use it often. Enjoy.

Costco Roasted Chicken and Veggies
This is a new recipe I made up just this week. It is easy to prepare, incredible to eat, low calorie, and tastes even better the next day.
Preheat oven to 350 degrees.
For three servings, take 6 chicken tenders (unbattered) and place them in a 6"x9" baking pan. Cut up six small sweet red, yellow, orange pepper and a sliced 1/2 onion and add to the pan.
Sprinkle 2 tbsp of minced garlic (to taste) over the veggies and chicken.
Drizzle olive oil over the top of everything in the dish. But don't overdo it.
Bake for 20 minutes, then turn the chicken over.
Bake for another 20 minutes. Spoon onto a plate. Sprinkle a little Old Bay spice over everything.
Enjoy.
Note: All of the ingredients are from Costco, I swear by their food, extremely high quality.

JC's Salad Recipe
This is a quick and easy salad dish that is terrific and good for you.
Handful of mixed greens, the greener the better
1/2 cup garbanzo beans
1/2 cup baby peas
1 small chopped yellow pepper
1 small chopped red pepper
(Add any other fresh veggies to taste)
2 tsp. of parmesian cheese
Dressing
1/4 cup olive oil
1/2 cup balsamic vinegar
1 tablespoon minced garlic
1 tablespoon mixed Italian seasonings (parsley, oregano, add cilantro if desired)
The key: mixing the dressing so that all the veggies are equally covered and the parmesian cheese is distributed throughout the salad.
Enjoy.
